strawberry compote ☁️

our overnight oats really are as easy as they sound. just add milk, leave overnight, and wake up to a nourishing breakfast that's ready to grab and go. topped with a simple homemade strawberry & raspberry compote, it's the perfect balance of creamy, fruity and naturally sweet.
serves 1
ingredients
for the overnight oats
- 1 x gurt lush overnight oats sachet
- 100ml milk of choice (or a little more for a looser consistency)
for the strawberry & raspberry compote
- 150g fresh strawberries, hulled and quartered
- 150g fresh raspberries
- 1 tbsp honey
- 1 tbsp water
- squeeze of lemon juice (optional)
to serve
- fresh berries (optional)
- nut butter (optional)
method
- empty the overnight oats sachet into a jar or bowl and pour over the milk. stir well until fully combined.
- cover and refrigerate overnight, or for at least 4 hours.
- meanwhile, add the strawberries, raspberries, honey and water to a saucepan over a medium heat. Cook for 8–10 minutes, stirring occasionally, until the fruit has softened and the mixture becomes thick and jammy. Add a squeeze of lemon juice if you'd like a little extra brightness, then allow to cool completely.
- spoon the compote over the overnight oats and finish with fresh fruit, a drizzle of nut butter or any of your favourite toppings.
gurt tip 💚
make a batch of the compote at the start of the week and keep it in the fridge for up to 5 days. it's just as delicious spooned over yoghurt, pancakes or porridge.
