oat pancakes ☁️

soft, golden pancakes finished with yoghurt, fruit and your favourite gurt lush granola.
ingredients
• 2 heaped tbsp yoghurt
• 1 heaped tbsp plain flour
• 2 tbsp oats
• 1 tsp baking powder
• 1 medium egg
• zest of 1/2 lemon
• 1 tsp sweetener of choice
• gurt lush granola to serve
we used greek yoghurt, bristol bee co honey and the og granola.
method
- add the pancake ingredients to a blender and pulse until smooth. avoid over blending. leave the mixture to rest for 5 minutes.
- heat a non stick pan over a low to medium heat and lightly grease if needed.
- spoon the batter into the pan to form small pancakes.
- cook for around 3 minutes before flipping, then cook for a further 2–3 minutes until golden and springy.
- serve with yoghurt, fruit, nut butter, honey or compote, then finish with granola for extra crunch.
