apple loaf ☁️

a soft, cinnamon spiced apple loaf perfect for slower mornings, afternoon coffee or an easy breakfast slice.
serves 9
ingredients
• 2 apples, coarsely grated with excess water removed
• 1 apple, finely diced
• 250g yoghurt of choice
• 3 medium eggs
• 50g unsalted butter, melted
• 120g plain flour
• 130g rolled oats
• 2 tsp ground cinnamon
• 1 tsp baking powder
• 1/2 tsp bicarbonate of soda
• pinch of salt
• 60g runny honey
• 1 tsp vanilla extract
method
- preheat the oven to 180°c fan. grease and line a standard loaf tin.
- in a large bowl, whisk together the yoghurt, eggs, melted butter, honey and vanilla. stir through the grated apple.
- in a separate bowl, combine the flour, oats, cinnamon, baking powder, bicarbonate of soda and salt.
- fold the dry ingredients into the wet mixture until just combined.
- gently stir through the diced apple, transfer to the loaf tin and smooth the top.
- bake for 50–55 minutes until golden and cooked through. cover loosely with foil if the top browns too quickly.
- leave to cool in the tin for 10 minutes before transferring to a wire rack.
serve sliced with yoghurt, nut butter, fruit or a sprinkle of granola ☁️
storage
store in an airtight container for up to 3 days at room temperature or 5 days in the fridge. freezes well for up to 3 months.
